Smokey chickpeas

Looking for a healthy snack option? Look no further than the humble chickpea. Packed full of protein, when dried out this little legume packs a crunchy punch. It’s a great alternative to nuts or chips as a quick homemade snack, and cheap in comparison as well.

Smokey chickpeas

800g can chickpeas, drained and rinsed
1/2 cup pepitas (pumpkin seeds)
2 cloves garlic, crushed
1/2 tsp ground cumin
1 tsp smoked paprika
2 tsp olive oil

Preheat your oven to 180 degrees C.

Pat the chickpeas dry using paper towel. Put the chickpeas, pepitas, garlic, cumin, paprika and oil into a bowl and mix to combine.

Spread the chickpea mixture onto 2 non-stick baking trays. Bake for 10 minutes or until slightly crisp.

Serves 6 as a snack.
