4 teaspoons olive oil
1 onion, chopped
3 cloves garlic, crushed
1 cup peanut butter, smooth or crunchy (your choice)
8 teaspoons wheat-free tamari (or soy-sauce)
1/3 cup sweet chilli sauce
4 teaspoons brown sugar
one 270 ml can (just over 1 cup) coconut milk
In a saucepan or fry pan sauté onion and garlic until cooked through. Add remaining ingredients and stir well. Reduce heat and simmer for 10 minutes, stirring occasionally.
Use as a marinade for tofu, as a dipping sauce, or with chicken to make a satay chicken pizza.
