Pizza bases

There really is nothing better than a truly homemade pizza. And I’m not just talking about buying a pizza base from the supermarket and adding a bit of mozzarella, I’m talking the whole kit and caboodle, homemade pizza dough and all!

Although slightly daunting, pizza dough is actually really simple to make – you just need to be a little more organised and prepare the dough ahead of time. Once you’ve tried it, you’ll never be able to go back to a pre-made pizza base again!

While there are many pizza dough recipes out there, this current favourite of mine I found in Marie Clare’s ‘Fast + Fresh’ and I can’t flaw it.

Pizza bases

250g (2 cups) Italian 00 pizza or bread flour
1 tsp sugar
1/4 tsp sea salt
7g dried yeast
1 tbsp extra virgin olive oil
125ml (1/2 cup) warm water

Put the flour, sugar, sea salt, yeast and olive oil into a large bowl and add enough warm water to form a smooth dough. Turn the dough out onto a floured surface and knead for 10 minutes. Form the dough into a ball and put it in a large bowl that has been lightly oiled. Cover with plastic wrap and leave to rise for 2 hours in a warm place. When the dough has doubled in size, punch it down and knead it again for a few minutes. Allow it to sit for 20 minutes before rolling out to shape.

Makes 2 x 23cm pizza bases

You can also make a large amount of dough at one time and freeze to save you time later. Wrap individual base servings in a ball shape to freeze.
