Many people would argue that getting organised and taking a packed lunch to work is just “too hard” or “takes too long”, when really it takes about 10-15 minutes, if that! And if you do it the night before, it saves you rushing around in the morning trying to get out the door in time for work.
The easiest packed lunch I’ve found is actually hidden in dinner the night before. If you make a bit extra, there’s enough for you (and the rest of your family) to take to work or school as lunch the next day. The key is having some great containers on hand so you can be super organised! A little bit of planning can go a long way and can save you lots of money in the long-run.
The following dish I cooked up last night, after I’d finished dinner. It took about 10 minutes and I pulled it straight from the fridge and into my work bag as I walked out the door. You can do this too quite easily.
Grilled cauliflower & brussel sprouts topped with feta & bacon
8 small brussel sprouts (4 large cut in halves)
1/2 caulifower, cut into medium florets
2 rashers bacon
salt & pepper
Steam the vegetables to part-cook them – they should still be a little crunchy. Melt butter in a medium-sized fry pan, add vegetables and season lightly with salt and pepper. Toss them around to lightly saute them them. Once the edges have browned, lay them out on paper towel to cool a little.
In the meantime, chop the bacon into little pieces and cook in the fry pan, tossing every now for 2-3 minutes. Take off the heat.
Put the vegetables into a airtight container. Crumble the feta on top and sprinkle with bacon pieces. Add a little parsley, put your container lid on and you’re ready to go!
This simple dish can be altered to suit your individual tastes and substituted with any of your favourite vegetables – that’s what I love about it.
