Greens, mint and feta salad

There’s never a shortage of brilliant salad recipes or variations you can create for any occasion. But I must admit, this greens, mint and feta salad has been one I’ve gone back to many a time. I created this recipe well over 18 months ago and it’s been used at barbecues and casual dinner parties, every time with a 100% friend approval rating.

So I thought it best I post and let you all enjoy the benefits this salad can bring. It boasts incredible colour and a pinch of zing, and is incredibly fresh and nutritious.

Greens, mint and feta salad

Greens, mint and feta salad

1 handful of snow peas
1 Lebanese cucumber
1 handful of green beans
1 bunch of asparagus
1 small green capsicum
1 small head of broccoli
baby spinach or rocket
1 avocado
200g feta cheese
10-15 large mint leaves

Dressing

2-3 tablespoons olive oil
juice of 1 small lemon
1 teaspoon crushed garlic

Wash all vegetables thoroughly.

Top and toe the green beans. Slice into chunks. Halve asparagus shoots. Cut the head of broccoli into small florets. Put all of these into a bowl and cover with boiling water from the kettle. Leave for 5-10 minutes and then drain and run under cold water until cool. Put these vegetables in the fridge to cool down even more.

Top and toe the snow peas and slice into chunks. Slice cucumber, capsicum and avocado. Tear mint leaves.

Put all the vegetables into a large bowl along with crumbled feta.

In a separate bowl, mix up the juice, olive oil and garlic and then pour over the salad vegetables. Mix through so all is evenly covered.

Pour into a serving salad bowl. Enjoy!
