Chicken and sweet potato pizza

There’s nothing I like more than getting home from work on a Friday after a long week, opening a bottle of red wine, making a pizza and watching the footy (AFL of course). And I don’t mean ordering a takeaway… it’s much tastier (and quite often quicker) to make you’re own. If you want a pizza that’s healthy and still tasty then this pizza is for you.

Chicken and Sweet Potato Pizza

Olive oil spray
2 slice Mountain Bread
1 tbsp tomato paste
40g low fat cheese, shredded
200g chicken breast fillet
½ cup sweet potato, cubed
2 medium brown mushrooms, sliced
2 spring onions, sliced
10 large basil leaves, torn
Cracked black pepper, to serve

Heat oven to 180 degrees C. Spray an oven tray with a little olive oil spray. Put cubed sweet potato onto tray and roast in oven for about 15 minutes or until golden and can be squashed under your finger or fork.

While the sweet potato is cooking, heat a medium fry pan with a little spray oil and add chicken breast fillet. Grill on both sides until breast is cooked through. Set aside and slice.

Bring the sweet potato out of the oven, take it off the tray and put aside. Using the same oven tray to lay out one slice of Mountain bread. Sprinkle 2 tablespoons of cheese on top and place the other slice of bread on top. When the cheese melts, it will hold the two slices together. Spread the tomato paste evenly over the bread and sprinkle evenly with remaining cheese.

Evenly spread the chicken slices, mushroom and sweet potato. Place in the oven for 8-10 minutes. Keep an eye on it. Once the mushrooms have reduced in size, they are cooked enough. You can then top with spring onion and basil and put in the oven again just until the basil wilts slightly.

Bring it out of the oven, top with cracked black pepper and slice. Serves 2.

Mountain Bread is great if you don’t want a heavy base or you have an intolerance to yeast. You can also use my easy Pizza Bases recipe which you’ll need to spend 15 minutes preparing a couple of hours ahead of time.
